I am so excited that the rest of the world finally discovered veggie noodles! I’ve been making my own for about 4 years, and was I ever pleasantly surprised to see 1) veggie noodles show up in my grocery store 2) all of my favorite food bloggers have started creating veggie noodle recipes. If you are new to the world of veggie noodles or you, like me, have been eating them for awhile, you probably know how amazing they taste, while offering you a gluten free and low carb option to replace those starchy noodles. Pasta is good, but it simply does not work for some of us, namely those of use who don’t want all the carbs and calories or the gluten. Veggie noodles let you quit worrying about having any of those, plus pack your foods with the flavor and vitamins of fresh vegetables. Will I ever go back? I don’t think so.
Until last year, though, I only knew how to make about 5 things with my veggie noodles. I must admit that the menu was getting quite dull. Voila, in my Pinterest feed suddenly appear…choices. So I’ve spent a good amount of time testing and trying out all the veggie noodle recipes that met my fancy. Not all were amazing, I gotta say.
