Ingredients:

  • 2 – 4 oz cans of solid white albacore tuna in water
  • 1 – 15 oz can black beans
  • 3/4 cup frozen corn
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup light mayo
  • 1/3 cup plain Greek yogurt
  • 1 small lime, juiced
  • 7 tsp taco seasoning

Directions:

Step 1

Drain the canned tuna, transfer it to a medium mixing bowl, then flake the tuna apart using a fork. Next, add the black beans, 3/4 cup frozen corn, 1/4 cup diced red bell pepper, 1/4 cup diced red onion, and 1/4 cup chopped fresh cilantro. Mix everything until combined.
