Some people may be skeptical about this because it’s a vegetable mac and cheese, but I prefer this to traditional macaroni and cheese sometimes. I know that mac and cheese make me feel sluggish because it’s a comforting food, but when I eat this version I feel great.
Ingredients:
- 1 large head of Cauliflower, cut into small florets
- 4 tablespoons Butter
- 2 cloves Garlic, crushed
- 6 tablespoons flour
- 2 cups Milk
- 1 cup Cheddar cheese, grated plus extra for topping
- 1 teaspoon salt
- 1/2 teaspoon Pepper
- 1 teaspoon Dijon mustard
- 1 teaspoon Paprika
- 1/2 cup Parmesan cheese, grated
Directions:
First, in a large pot with salt, boil the cauliflower florets and cook for 5 minutes. Drain and set aside. Preheat the oven to 400F. In a saucepan, melt butter over medium heat, and add crushed garlic. Saute for about 1-2 minutes then add flour and stir consistently for 1 minute. Gradually pour in the milk while stirring.
